so uh, for those of you who were lucky enough to be at PiG's little (I mean huge) party over the weekend may have been lucky enough to enjoy some of my freshly prepared BBQ chicken.
and a lot of people were screaming at me for the recipes of the 3 types that I made. Mainly Tgun and PiG. ahaha.
anyway - so there were 3 kinds of chicken, Mint and Coriander, Yoghurt Masala and Caribbean Lime and Chili.
so here are the recipes for all you eager chicken lovers out there.
YOU WILL REQUIRE A BBQ FOR ALL THESE AMAZE CHICKENS OF DOOM!
Caribbean Chicken
Ingredients:
1kg of chicken breast
2 fresh red chilies
2 cloves of garlic
1 brown onion
2 teaspoons of chili powder or paprika (your preference)
1.5 teaspoons of dried thyme
2 tablespoons of olive oil
the juice of at least 3 limes
salt and pepper to season
Preparation:
Cut the chicken up into nice slither pieces, that can easily be bbq'd / cooked with out them drying out before cooking through.
Pour all the lime juice over the chicken and mix through.
Grab your onion, and finely dice it and then chuck it in to the chicken & lime juice - mix through.
Next get your chilies & garlic, finely dice both and toss them in.
Now pour in your olive oil and add in the chili powder, thyme, salt & pepper, mix through thoroughly.
Let this marinade sit with the chicken for at least 15minutes. You want to the chicken to actually start 'cooking' in the lime juice. the acidity of the juice starts the cooking process even before you smash the chicken on the grill. Tis pretty cool.
Yoghurt Masala Chicken
(exactly the same as tandoori chicken, only not required to have the coloring to make it red)
Ingredients:
1kg of chicken breast
3 Tablespoons of good quality greek yoghurt
2.5 teaspoons of coriander powder
1.5 teaspoons of tumeric powder
1.5 teaspoons of garam masala
1 - 2 teaspoons of chili powder
2 teaspoons of malt vinegar
the juice of a lime or lemon
taste levels of salt
taste levels of black pepper
Preparation:
This one is pretty damn easy, Just get a good sized mixing bowl, place the yoghurt into the bowl and then add all your dry spice + the vinegar and juice in there and mix it all up. Add your chicken and let it marinade from 10minutes to 24 hours.
Coriander and Mint Chicken
Ingredients:
1kg of chicken breast or thigh
Fresh Mint (a bunch)
Fresh Coriander (a bunch or 2, depends on how much you are getting in one bunch)
2 cloves of garlic
2 fresh red chilies
1 teaspoon of chili powder
2 tablespoons of honey
2 tablespoons or more of olive oil. enough to make a nice thick paste.
salt to taste
Preparation:
Grab your mint, coriander, garlic & chilies, and dice them up nice and fine, then add them into a good sized dish for marinating the chicken.
Add in your chili powder, honey, salt and olive oil and mix through to create a nice thick paste.
Mix in your chicken and let this marinade from 30 minutes to one day.
Cooking Methods:
BBQ, of course! you want to do this on the plate section of your bbq. You can do this on the open grill, but for the best results, use the plate, it allows the chicken to cook in it's own juices / you won't get any random flare ups that will over char the outside / spices of the chicken.
With the cooking, oil down the plate, make sure you are cooking on a medium to high heat - slap your chicken on the plate and then give it a quick sprinkle of olive oil to keep it from drying out too fast.
Usually it takes about 2 - 3 minutes per side, which is pretty standard / easy.
Uhh.. that's it!

you can do these on the stove if you have a nice thick fry pan - you just want to make sure that there isn't too much oil in the pan when you're cooking the chicken. but other then that treat it the same way as I described above; 2 - 3 minutes per side on medium to high heat.

Worked for me and Jared the next day! We used the left over chicken and smothered it in the marinades, crossed our fingers the chicken was still good to eat after being left out a couple hours, and away we went
