Actually its been proven that carriers are a better transition than Collosus vs Terran.
Until you get more than 1 Collosus
Basically you dont want to rush to carriers, instead do a 3gate expand, then simply build a SG+Fleet beacon once your expansion is safe. Carriers achieved!
I've seen Ra do this all the time on his stream. He does it mostly vZ but sometimes he does it vT. I'm just going to lay out what he does in PvZ.
He opens with a standard FFE. Get your 2 gases around 18 or 19 food. At your first 150 gas, you put down a stargate, and take your 3rd gas at your nat. He doesn't research warpgate, insteads favouring +1 air attack. Take your 4th gas as soon as you can and throw down a fleet beacon, alongside a second stargate. Rush to 2 carriers, followed up by 2 void rays. Then proceed to snipe tech, while macroing behind it.
Carriers are generally pretty bad, if you wanna win, dont do this, if you wanna have fun and carrier rush people, then go for it! Systems build is decent and Anything by whitera is perfect, have fun man!
Fastest carrier you can get in PvZ is 9:30 on 2 bases with FFE with probe cutting and assuming no early pressure. Only reason it is safe in pvz because zerg mid game units are bad against cannons, and can be controlled with only 1 sentry at ramp.
Can do the same timing in PvT, but it's not very good, because most 2-base medivac timings come around same time, and cannons with carrier won't clear it. For PvT, it's best to open FE into 5(7) gate TC, then transition to carriers on 3x bases.
PvP carriers...never tried it. Had one game waaay back that lasted long enough to get carriers on the field. Phoenixes are ok though, but the build is kind of complicated due to possible variations.

And the only reasonable matchup to use carriers is PvZ

Actually, people don't understand the fact that Carriers sucked in BW because all the interceptors would hit one unit no matter the damage. With the improved AI in Starcraft 2, all the interceptors go out and hit different units. An army of Hydra's will MELT. The only bad thing is their build time and cost.

oh so THATS why we see them more in sc2, i was always wondering why pro's use them all the time.
I played against a toss who did Carrier & DT thought out the whole game against me... was interesting but if my observers don't die, my blink stalkers will have fun killing all his carriers & DTs!

Carriers aren't bad in pvz, carriers are bad in pvt and pvp because they're so cost inefficient it's not funny and if you try to micro them, their dps drops to 0
I did the carrier rush funday monday thing ages ago and it was pretty fun and good at my level back then (plat i think). Did it off 1 base, I think I waited for 2 carriers, I can't remember, it was pretty fun :P.
It was so long ago that Kulas Ravine was in the map pool though :P

Carriers are only viable late game, that is, when you can survive long enough to mass like 20 of them...But still, Void Rays are much more powerful en masse IMO.
