I'm having big trouble with Protoss once they get that deathball at around 15 mins. I usually do 3 rax into ghost or mmm+viking but it just never works for me...
It feels like the second the Protoss gets his natural, its automatic deathball gg
MMM viking should do fine against the protoss deathball as long as u have quite a few amount of vikings. The important factor is DO NOT engage the deathball straight up. Use ur vikings IMBA range to sniper some VRs and collosus doing hit and runs to soften his VR/collosus count. As long as he have below 4 collosus (2-3). You will be able to do fine with an MMM balls.
If you're going MMM then just do a timing push as Stimpack finishes, and expand while you're pushing. 9 times out of 10 this works for me, either by destroying their early expansion, or, if they're one-basing, by just luring them out, or doing a Medivac drop onto their mineral line.
If he doesn't insta-GG, he'll be pretty far behind economically. The only worry is if they've gone mass Stalkers, you need to try and catch them out of position or they'll chew up your Medivacs with half your army still inside.
You do not let him get a deathball, do timing attacks, if thats not your cup of tea then just try and do as much constant pressure with drops/concussive shell rauders/marines so that your opponent has to spend more and more resources on units to defend/fight rather than higher tech.
Currently I'm experimenting with vanilla marines + 2 thors + raven + cloak banshee push off of 2 bases somewhere between the 13-15 minute mark. the 2 thors get vision of the obs thanks to the raven and with their AMAZING range take it out allowing your cloaked banshees to obliterate everything. Marines are just a distraction/mineral dump. This is very much a tech based play.
The more 'meta' thing to do is MMM + vikings (anti-colosus) with a few ghosts out front to snipe obs and emp HT. I really don't like this style of play though, i think it's too vulnerable to colo/storm. if the proposed amulet nerf happens though... I dunno.
the point is to delay the protoss death ball long enough and kill him before he makes one. If succeeds in making a deathball then lol, he just a-moves in your base and even if you try to drop his probes it doesn't matter. Because he doesn't need to reinforce a DEATH ball
