I am currently looking for some helpful explanations on how to transition into the mid to late game, I am finding it hard, I open with a 3 gate push and most of the time it doesn't go so well.
I notice when I am attacking they usually already have a robo up, and are building immortals and I haven't even got a robo, so I am already behind is there anyway that I can still win the game if I am behind or should I gg, and try again?

First of all, why would you go for a 3 gate push? Its not a very good build cause it puts you behind in robo tech if u fail to do any damage. I would recommend u to go for a 2/3 gate robo expand to be your staple build. You can either open up 3 stalker rush or 1 gate zealot sentry zealot into robo tech. Make 1 obs 1 immmortal then you expand. Make up to 30 probes only until ur obs scouts that he expanded too. Then proceed to mid game making collossus and chargelots
As Proannn said 3 gate push isn't good, id say the 2 gate robo strat is most people bread and butter while they are learning and should teach you scouting and reacting. If you want to push i'd advice a 5 stalker or 7 stalker push off a 3 stalker opening which is
9 pylon
13 gate from rallying the 12th probe (this is also your scouting probe)
14 gas
15 2nd pylon from rallying the 15th probe
@gate 100% cyber core
18 2nd gas
19 2nd gate
extra tip when the second gas pops make it 2 probes in each gas til you hit 30 supply or you see a 4 gate coming thru a lack of a second gas with your scouting probe. This allows you to make stalkers perfectly as you need if your macro is good.
The above opening can also be changed into a blink build fairly easily but as proannn correctly said a stable build of 2/3 gate robo is a good thing to learn and should lead you solidly into the mid game
