Thats the build im running with. My stats are 16k hp / 800dps / 32% dodge (or there abouts) and about 38% melee dr (from memory)
Basically you're using the quickening rune too take advantage of the sweeping wind's crits (not sure if it's intended by blizzard, but when you're in an aoe mob, you basically have unlimited spirit) so you can spam moh too keep yourself alive. SSS and Serenity are your "oh shit" buttons for if you get into trouble. And i use Lashing tail kick for more dps on bossfights.
Stack dex + vit and you should be right, check the AH for better weapons, and at higher levels, sword and board is better (Im currently using 2x1handers)
Insom, how would swapping out MoH for MoE (Either armour or DP glyph) and going cyclone strike.
With using Fists of Thunder like you said, you can spam your mantra and cyclone for ~35% dodge.
I understand perhaps you wouldn't want to rely on RNG for HC mode, but with trans on, you can spam the big spirit abilities for healing via that way. As well as having +HP on hit attributes ?

As you said, id prefer not too rely on rng in HC. Ill be making a sc monk too test MoR actually (with the increased dmg returned glyph) because 60% returned to mobs seems ridiculous (If the mobs are dealing 1k dmg, 600 returned for nothing?)
Might give it a go in ac1 nm, cause i know i can do that either way.
EDIT: I've also toyed with the idea of swapping lashing tail kick for crippling wave with the -20% less dmg rune also
