I've been experimenting using mech units vs Zerg . I tried opening with 1 rax expand and taking early gas with bunker defense until I get my hellions. I usually start off with 2 factories. One with tech lab and another with reactor. I start tank production after I scout what my enemy has. If my opponent goes for roach, I would go tank, if I scout Mutalisk, I would go straight for turrets and Thors. I would go for early upgrades and then try kill him before Hive tech finishes.
How can I do better mech style? I searched for Day9 dailies and such but only Goody's Mech Style comes up and I get most of the timings and such. Right now all I do is just make factory units and hope he doesn't go for an early Hive. I usually die to large mutalisk flocks and such :/.
Also how can I scout on what composition he goes? I know if I see roach, I don't see banelings and vice versa. But how can I tell if a Zerg is going mutalisk?

For the muta thing some indications that I know of are double gas at 630 scan with lair coming. the timing for mutas used to be around 11 minutes but a 2 base pure muta tech can be a lot earlier.
if mass muta is a problem you need more thors and try to spread them a little bit, magic boxing would be semi countered with some decent spread.

As a player who has meched a lot in TvZ ... I agree what SanG is saying, I don't think I've ever successfully defended a roach drop. It can hit at about 14 minutes with 50 roaches or so, and you just don't have enough units to defend since mech takes so long to build. I think the best way to play mech TvZ is to deny scouting as long as possible and surprise them with it.
As far as openings are concerned, if you go 13 gas you can expand after factory and get faster reactored hellions. If you delay gas until 15, you can fit your CC in before factory quite nicely. Just remember that armory is pretty critical for upgrades, and try to time thors to pop at about the time mutas are out. Definitely try to be on top of muta timing with scans.
Mixing in banshees is a good option to have, especially against a roach-heavy army. Also, bring SCVs with pushes to repair!

Roach drop will completely destroy your mech, anything else should be counterable if scouted. You seem to know how to deal with zerg responses on paper, so I'm guessing you just need to execute it better, get used to the timings and such. If they tech to hive, you can usually outright kill them, or at last cripple their economy with some blueflame hellion shenanigans unless they have infestors out already. Basically, if they tech too hard they will either have too little eco or too little units, which you can abuse.
As far as MechvZ openers go, I do a 1 rax expand into double gas reactor hellions and banshees. Depending on if they opened gasless and attempt to get a quick third, I will go a macro CC and 2 armories before getting the 2nd and 3rd factories. If they have gone gas early then I play more safe, usually that means getting the 2nd and 3rd factories before the armories and not getting the macro CC.
Use the first 2-4 hellions just to scout and deny creep when possible, try not to lose them. Use banshees to do the same and harass the third, also when I have 2 I like to go to mineral lines and 1 shot a few drones (1 shot per banshee).
As far as factory production goes, I aim to go pure thor/hellion and only start building tanks if I scout roaches early or when I approach max. I scan a lot (I don't think it's that bad when going mech as minerals aren't as important compared to marine builds) and try to see when the hive is started.
When that happens (i see hive) I add 3 starports (to 4) and make tech labs on them and start ravens (use the first starport to get the energy upgrades and HSM). I scan liberally to see if they are going ultra or broodlord, but if you have gone mainly thor (rather than tank), unseen ultras aren't a problem. When you see BL's (or just guess BL) make vikings (make sure to have at least 2-3 ravens for PPD vs corruptors). When guessing broodlords try not to overmake vikings. Transition to BCs. Make ravens and BCs while trading out hellions and scvs (make lots of macro OCs).

Roach drops will kill you if you do not see it coming and cannot get your army into position. Doesn't even matter if you have turrets because overlords have so much hp.
